Instructions

1. Preheat Oven: Set your oven to 400°F and spray a baking sheet with nonstick cooking spray to prepare for the baking process.

2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon until well combined.

3. Mix Wet Ingredients: In a large bowl, whisk the melted unsalted butter with the granulated sugar, then stir in the large egg, vanilla extract, and no-sugar-added applesauce until everything is fully incorporated.

4. Combine & Add Apples: Gently fold the dry flour mixture into the wet ingredients until just combined, being careful not to overmix. Then, fold in the finely diced Honeycrisp apples.

5. Scoop Batter: Using about 1 tablespoon of the apple-studded batter, form mounds and space them a few inches apart on the prepared baking sheet.
