  • Diet: Vegetarian

Description

Apple Pie Enchiladas are a warm, sweet twist on a classic dessert. Flour tortillas filled with spiced apple filling, baked to golden perfection, and topped with cinnamon sugar and buttery goodness—it’s like apple pie wrapped in a tortilla! Perfect for cozy family dinners or holiday gatherings.

Ingredients

Scale
  • For the filling:

    • 3 medium-sized apples (peeled, cored, and chopped)

    • ½ cup brown sugar

    • ½ tsp ground cinnamon

    • ¼ tsp ground nutmeg

    • 1 tbsp lemon juice

    • 1 tbsp unsalted butter

  • For the enchilada assembly:

    • 68 large flour tortillas

    • ½ cup granulated sugar

    • ½ tsp ground cinnamon

    • ½ cup unsalted butter (melted)

    • Whipped cream or vanilla ice cream (optional, for serving)

Instructions

  1. Cook Apple Filling: In a skillet over medium heat, melt butter. Add chopped apples, brown sugar, cinnamon, nutmeg, and lemon juice. Stir and cook for 5-7 minutes, until apples are tender. Remove from heat.

  2. Assemble Enchiladas: Spoon the apple mixture evenly onto each tortilla. Roll each tortilla up and place them seam-side down in a greased baking dish.

  3. Make Topping: In a small bowl, mix granulated sugar and cinnamon. Sprinkle over the rolled-up enchiladas. Pour the melted butter evenly on top.

  4. Bake: Preheat the oven to 350°F (175°C) and bake for 20 minutes or until golden and bubbly.

  5. Serve: Enjoy warm with whipped cream or vanilla ice cream, if desired.

Notes

  • Use Granny Smith or Honeycrisp apples for the perfect balance of sweetness and tartness.

  • For a richer flavor, substitute half of the butter with coconut oil or butter-flavored shortening.

  • Serve with a drizzle of caramel sauce for extra indulgence!

  • This recipe can be made ahead; just refrigerate the assembled enchiladas before baking, and pop them in the oven when ready.
