  • ¼ cup sour cream
  • 2 tablespoons butter
  • ¼ cup milk
  • Salt, to taste

  • ½ lb breakfast or Italian sausage, crumbled
  • 1 small onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh parsley
  • ½ cup breadcrumbs (optional)

Instructions

1. Begin by boiling the cubed potatoes in salted water until fork-tender, about 15–20 minutes. Drain the potatoes and mash them with sour cream, butter, milk, salt, and pepper until smooth. Set the mashed potatoes aside.

2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain it on paper towels. In the same skillet, cook the sausage and onion until browned and cooked through. Drain any excess fat, then add the cooked bacon back to the skillet and stir to combine.

3. Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or grease it well. Spread half of the mashed potatoes into the bottom of the loaf pan. Top with the meat mixture, spreading it evenly. Sprinkle half of the cheddar cheese over the meat. Spread the remaining mashed potatoes over the top to cover.

4. Sprinkle the rest of the cheddar cheese over the top of the loaf. If using, add the breadcrumbs and gently press them down.

5. Bake the Bacon and Sausage-Stuffed Potato Loaf for 25–30 minutes, or until the top is golden brown and heated through. Allow the loaf to rest for 10 minutes before slicing.
