  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves minced garlic
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • Worcestershire sauce to taste
  • Dried oregano to taste
  • Dried thyme to taste
  • Salt to taste
  • Pepper to taste
  • 1012 slices bacon
  • 2 pound peeled and cubed potatoes
  • 4 cloves minced garlic
  • 1/2 cup butter
  • 1/2 cup milk
  • Salt to taste
  • Pepper to taste
  • Fresh parsley (optional)

Instructions

1. Preheat your oven to 350°F.

2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Parmesan cheese, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix well, but be careful not to overwork the mixture.

3. Shape the meatloaf mixture into a loaf and place it on a baking sheet or in a loaf pan.

4. Lay the bacon slices over the top of the meatloaf, tucking the ends under to cover it completely.

5. Bake the Bacon-Wrapped Meatloaf for about 1 hour, or until the internal temperature reaches 160°F.

6. While the meatloaf is baking, prepare the Garlic Mashed Potatoes. Boil the peeled and cubed potatoes with the minced garlic until fork-tender, about 15 minutes.

7. Drain the potatoes and garlic, then mash them together. Add the butter and milk, and season with salt and pepper to taste.

8. Stir in the fresh parsley, if desired.

9. Once the meatloaf is fully cooked, let it rest for a few minutes before slicing.

10. Serve the Bacon-Wrapped Meatloaf slices over a bed of the creamy Garlic Mashed Potatoes.
