Ingredients
- 2 cups mashed potatoes (prepared and cooled)
 - 1 cup shredded cheddar cheese
 - 1/2 cup grated Parmesan cheese
 - 1/4 cup chopped green onions
 - 1 large egg
 - 1/2 teaspoon garlic powder
 - 1/2 teaspoon onion powder
 - 1/4 teaspoon black pepper
 - 1/4 teaspoon salt
 - 1/2 cup breadcrumbs
 - Cooking spray or oil for greasing
 
Instructions
1. Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with cooking spray or oil.
2. Mix Ingredients: In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan, green onions, egg, garlic powder, onion powder, pepper, and salt. Mix until the ingredients are fully combined.
3. Shape and Coat: Scoop about 1 tablespoon of the mixture and roll it into a ball. Lightly coat each ball with the breadcrumbs.
4. Fill Muffin Tin: Place each coated ball into the prepared mini muffin tin.
5. Bake: Bake the Baked Cheesy Potato Puffs for 20–25 minutes, or until they are golden and crispy on the outside.
