Ingredients
- 4 pieces boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 medium onion, chopped
- 3 tablespoon extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper, to taste
Instructions
1. Preheat your oven to 425°F.
2. In a large bowl, combine the olive oil, garlic powder, smoked paprika, dried oregano, ground cumin, salt, and pepper.
3. Add the chicken breasts, sliced zucchini, and chopped onion to the bowl with the marinade. Toss until evenly coated and marinate for at least 15 minutes.
4. Transfer the mixture to a baking dish and bake uncovered for 30 minutes, or until the chicken is golden brown and the zucchini is tender.
5. Let it rest for a few minutes before serving.
