Description

Baked Zucchini and Cheese is a comforting, crowd-pleasing dish that celebrates the humble zucchini in all its glory. With a perfect blend of creamy mozzarella, tangy Parmesan, and aromatic Italian seasoning, this recipe is a surefire way to make your taste buds dance.

Ingredients

Scale
  • 3 medium zucchini, sliced into 1/4-inch rounds
  • 2 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper (to taste)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (optional, for crunch)

Instructions

1. Preheat your oven to 400°F. Lightly grease a baking dish or line a sheet pan with parchment paper.

2. In a bowl, toss the zucchini slices with the olive oil, minced garlic, Italian seasoning, salt, and black pepper until they’re evenly coated.

3. Spread the seasoned zucchini in an even layer in the prepared baking dish. Sprinkle the mozzarella and Parmesan cheeses over the top, and if desired, add the breadcrumbs for extra crunch.

4. Pop the dish in the oven and bake for 18 to 22 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

5. For a golden, crispy top, you can broil the dish for 1 to 2 minutes, keeping a close eye on it to prevent burning.

6. Allow the Baked Zucchini and Cheese to rest for 5 minutes, then serve it warm, garnished with chopped parsley if desired.

Notes

Choose medium-sized zucchini with a vibrant green color and firm skin.

Feel free to experiment with different herbs and spices or cheese varieties.

This dish can be assembled in advance and baked just before serving.

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
