  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon sesame oil
  • 2 large eggs
  • 1 cup diced carrots
  • 1 cup diced onions
  • 1 cup chopped green onions
  • 4 cup day-old cooked rice
  • 2 tablespoon melted butter
  • 2 tablespoon lemon juice
  • 3 tablespoon soy sauce
  • 1 cup frozen peas
  • 1/4 cup Sriracha
  • 1/4 cup mayonnaise
  • 2 tablespoon honey
  • 2 tablespoon lime juice

Instructions

1. Season the chicken cubes with paprika, garlic powder, salt, and pepper.

2. Cook the seasoned chicken in an air fryer until crispy and golden brown, flipping halfway through.

3. In a skillet, heat sesame oil and scramble the eggs until just set. Remove and set aside.

4. In the same pan, sauté diced carrots, onions, and green onions until tender.

5. Add day-old rice and stir-fry for a few minutes, breaking up clumps.

6. Reintroduce scrambled eggs, melted butter, lemon juice, soy sauce, and frozen peas to the rice.

7. Toss everything together to combine flavors and heat through.

8. Toss cooked Bang Bang chicken with remaining Bang Bang sauce and top fried rice with it.

9. Garnish with fresh green onions.

Notes

Use a non-stick skillet or wok to prevent sticking.

Fluff cooked rice with a fork before adding to the pan for maximum fluffiness.

Adjust spice level of Bang Bang sauce to suit personal preference.

Consider adding other proteins like shrimp or tofu for variation.

Store leftover fried rice and chicken separately for easy reheating.
