  • 4 slices bacon, chopped
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese

  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup BBQ sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup crushed potato chips (for topping)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the elbow macaroni according to package instructions, drain, and set aside.
  3. In a skillet, cook the chopped bacon until crispy. Remove and set aside.
  4. In the same skillet, melt the butter over medium heat. Whisk in the all-purpose flour and cook for 1 minute, stirring constantly, to create a roux.
  5. Gradually whisk in the milk, cooking and stirring until the mixture has thickened, about 3-5 minutes.
  6. Add the shredded sharp cheddar cheese, shredded mozzarella cheese, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir until the cheese has melted and the sauce is smooth.
  7. In a large bowl, combine the cooked macaroni, cheese sauce, crumbled bacon, and BBQ sauce. Mix until well incorporated.
  8. Grease a muffin tin and spoon the mac and cheese mixture into each cup, filling them to the top.
  9. Sprinkle the crushed potato chips over the top of each cup, pressing them gently to adhere.
  10. Bake in the preheated oven for 20-25 minutes, or until the cups are golden brown and bubbly.
