These Bacon-Wrapped BBQ Cheese-Stuffed Meatloaf Bombs are a fun and delicious twist on traditional meatloaf. Filled with gooey cheddar cheese and drizzled with BBQ sauce, each bite is wrapped in crispy bacon for a truly indulgent experience.

- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 1 large egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup BBQ sauce (plus more for drizzling)
- 12 slices of bacon
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, garlic powder, onion powder, salt, and black pepper. Mix until just combined.
- Form the mixture into 12 equal-sized meatballs.
- Create a small indentation in each meatball and fill with shredded cheddar cheese and a drizzle of BBQ sauce. Seal the meat around the filling.
- Wrap each meatball with a slice of bacon, securing with a toothpick if necessary. Place on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, until bacon is crispy and the internal temperature reaches 160°F (71°C).
- Drizzle with additional BBQ sauce and serve hot.
