Ingredients
- 1 cup dried Great Northern beans
- 2 slices thick-cut bacon
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 4 cup low-sodium chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the dried Great Northern beans by soaking them overnight or using the quick soak method. Drain and rinse the beans.
2. In a large pot or Dutch oven, cook the thick-cut bacon until crispy. Remove the bacon and set aside, leaving some fat in the pot.
3. Add the diced onion, carrots, and celery to the pot with the bacon fat. Sauté until softened and onions are translucent. Stir in minced garlic and cook for an additional minute.
4. Add the soaked beans, chicken broth, and dried thyme to the pot. Bring to a boil, then reduce heat and let simmer for 1 to 1.5 hours or until beans are tender.
5. Chop the reserved cooked bacon and stir it into the soup. Adjust seasoning with salt and pepper as needed.
