Ingredients
- 2 bags (12 ounce each) frozen cheese tortellini
- 2 packages (14 ounce each) Polska kielbasa, sliced thin
- 8 ounce fresh mushrooms, sliced
- 8 ounce fresh spinach
- 1 pint cherry tomatoes, halved
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Parmesan cheese, grated (for serving)
Instructions
1. Preheat your Blackstone griddle to medium-high heat.
2. Drizzle olive oil on the hot griddle, then add the sliced kielbasa. Cook until browned and heated through, about 5-7 minutes. Remove and set aside.
3. In the same area of the griddle, add sliced mushrooms and sauté until softened, about 3-4 minutes. Add minced garlic, fresh spinach, and halved cherry tomatoes. Sauté until spinach wilts and tomatoes soften, about 2-3 minutes.
4. Add frozen tortellini to the griddle. Drizzle with more olive oil and sprinkle with oregano, basil, salt, and pepper. Cook until heated through and slightly crispy on edges, about 5-7 minutes.
5. Return cooked kielbasa to the griddle and toss everything together to combine and heat through. Transfer to a serving platter, sprinkle with grated Parmesan cheese, and serve immediately.
