Ingredients
-
8 oz (225 g) cream cheese, softened
-
1/4 cup (50 g) granulated sugar
-
1 teaspoon vanilla extract
-
1 cup (150 g) fresh or frozen blueberries
-
8–10 egg roll wrappers
-
1 large egg, beaten (for sealing)
-
Vegetable oil, for frying
Instructions
-
Make the Filling: In a bowl, combine softened cream cheese, sugar, and vanilla extract. Mix until smooth, then gently fold in the blueberries.
-
Assemble Egg Rolls: Place a spoonful of filling onto each wrapper. Fold in the sides, then roll tightly, sealing the edge with a bit of beaten egg.
-
Heat Oil: In a deep skillet or pot, heat vegetable oil to 350°F (175°C).
-
Fry Egg Rolls: Fry the egg rolls, a few at a time, for about 2-3 minutes per side until golden brown and crispy.
-
Drain & Serve: Remove the egg rolls from the oil and drain on paper towels. Serve warm and enjoy!
Notes
-
For an extra crispy texture, make sure to fry the egg rolls in batches so the oil temperature stays high.
-
If you don’t have egg roll wrappers, you can also use spring roll wrappers as a substitute.
-
You can make the filling ahead of time and refrigerate it for easier assembly later.
