Blueberry Thyme Chicken: A vibrant and flavorful dish combining sweet blueberries and fragrant thyme.
Ingredients
- 4 boneless, skinless chicken breasts (6 ounce each)
- 1 cup fresh blueberries (save a few for garnish)
- 2 tablespoon balsamic vinegar
- 1 tablespoon honey
- 2 teaspoon fresh thyme leaves
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
Instructions
1. Start by seasoning the chicken breasts with salt and pepper on both sides.
2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and sear for 4-5 minutes per side until golden brown and cooked through. Remove from skillet.
3. In the same skillet, add the fresh blueberries, balsamic vinegar, honey, and thyme. Cook for 3-4 minutes until blueberries soften and sauce thickens.
4. Return the seared chicken breasts to the skillet, spooning the blueberry thyme sauce over the top. Cook for an additional 1-2 minutes to warm through.
5. Serve with reserved fresh blueberries and additional thyme leaves for garnish.
