Ingredients

Scale

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup boiling water

For the Chocolate Cream Filling:

  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 large egg yolks
  • ¾ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 4 ounces semi-sweet chocolate, chopped

For the Whipped Cream Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Make the Cake Batter: In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, buttermilk, vegetable oil, and vanilla extract. Mix until smooth. Gradually add boiling water, stirring until fully combined (batter will be thin).
  • Bake the Cake: Pour batter evenly into the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  • Make the Chocolate Cream Filling: In a medium saucepan, combine heavy cream, milk, egg yolks, sugar, and cornstarch. Cook over medium heat, whisking constantly until the mixture thickens and begins to boil. Remove from heat, stir in vanilla extract and chopped semi-sweet chocolate until smooth. Let cool to room temperature.
  • Whip the Cream Topping: In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Assemble the Cake: Place one cooled cake layer on a platter. Spread chocolate cream filling generously over it. Top with the second cake layer and gently press down. Spread whipped cream topping over the entire cake, covering the sides.
  • Serve: Slice and enjoy the rich layers of chocolate heaven!

Notes

  • Ensure the cakes are fully cooled before assembling to avoid melting the cream filling.
  • For extra flavor, you can add a hint of espresso to the chocolate cream filling.
  • Store leftovers in the refrigerator for up to 3 days.
