Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 cup orzo pasta
- 8 ounce Boursin cheese (Garlic & Fine Herbs)
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, diced
- 2 cup baby spinach
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoon olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Fresh chopped parsley or basil for garnish (optional)
Instructions
1. Preheat your oven to 425°F and lightly oil a 9×13-inch baking dish.
2. In the prepared baking dish, combine the dry orzo, chicken broth, olive oil, Italian seasoning, salt, pepper, cherry tomatoes, zucchini, onion, and minced garlic. Nestle the Boursin cheese in the center, but do not mix it in just yet.
3. Cover the baking dish tightly with foil and bake for 25 to 30 minutes, or until the orzo is nearly tender and the chicken is cooked through.
4. Remove the foil and stir well to melt and distribute the Boursin cheese, creating a delectable, creamy sauce that coats the entire dish.
5. Stir in the baby spinach until it wilts into the Boursin Orzo Bake. If using grated Parmesan cheese, sprinkle it on top at this stage.
6. Bake the dish uncovered for an additional 5 to 8 minutes, or broil it for 1 to 2 minutes, to achieve a light browning on top and ensure everything is heated through.
7. Allow the Boursin Orzo Bake to rest for 5 minutes before serving. Garnish with fresh chopped parsley or basil, if desired.
Notes
For a healthier option, you can use whole wheat orzo instead of the regular variety. You can also experiment with other vegetables to suit your taste preferences.
