  • 4 large eggs
  • 1 cup bacon, chopped and cooked until crispy
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • Gravy, enough to drizzle over
  • 3/4 cup unsalted butter, melted
  • 3 large egg yolks
  • 1 teaspoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon garlic powder (optional)
  • Salt and black pepper, to taste

Instructions

1. Preheat your oven to 400°F. Spread the frozen hash browns evenly on a baking sheet lined with parchment paper. Drizzle olive oil over them and season with salt and black pepper. Bake for about 20 minutes, flipping halfway through, until crispy and golden brown.

2. In a skillet over medium heat, add a drizzle of olive oil and the chopped bacon. Cook for 6-8 minutes until crispy and browned. Remove bacon from skillet and set aside.

3. In the same skillet, melt a tablespoon of butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness. Season with salt and pepper.

4. To prepare the hollandaise sauce, set up a double boiler. Bring a pot of water to a gentle simmer. In a heat-proof bowl, whisk together egg yolks, Dijon mustard, and white wine vinegar for about 2 minutes until thickened. Slowly drizzle in melted butter while whisking continuously. Once thickened, stir in lemon juice, cayenne pepper (if using), garlic powder, and season with salt and pepper.

5. To assemble, layer crispy hash browns on a serving plate. Top with cooked eggs, then sprinkle with cheddar and mozzarella cheeses. Drizzle warm gravy over the dish. Spoon hollandaise sauce over the top and sprinkle with crumbled bacon. Garnish with fresh herbs or hot sauce if desired.
