  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon black pepper
  • 1 1/2 cup cherry tomatoes, halved
  • 1/3 cup red onion, finely chopped
  • 1/3 cup fresh basil, chopped
  • 1 cup shredded mozzarella
  • 2 tablespoon grated Parmesan

Instructions

1. Preheat the oven to 425°F. Lightly oil a 9×13-inch baking dish to prevent sticking.

2. Season the chicken by placing the breasts in the prepared baking dish. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper. Pour this flavorful mixture over the chicken and turn to coat evenly.

3. Bake the chicken for 22 to 28 minutes, or until it reaches an internal temperature of 165°F.

4. While the chicken is baking, prepare the bruschetta topping. In a bowl, gently toss together the halved cherry tomatoes, chopped red onion, and fresh basil. Season with a pinch of salt.

5. Once the chicken is cooked, top it with the mozzarella cheese (and Parmesan, if using) and spoon the bruschetta topping over the top. Return the dish to the oven for an additional 3 to 5 minutes, just until the cheese has melted.

6. Serve the Bruschetta Chicken Bake after allowing it to rest for 5 minutes.
