Crust:

  • 1 ½ cups graham cracker crumbs

  • ½ cup unsalted butter, melted

Cheesecake Filling:

  • 1 cup granulated sugar

  • 2 (8 oz) packages cream cheese, softened

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 cup sour cream

  • 1 cup caramel sauce, divided

  • 1 cup crushed Butterfinger candy bars, divided


Instructions

  • Preheat oven to 325°F (163°C).

  • Line a 9×13-inch pan with parchment paper, leaving an overhang for easy lifting.

  • Make the crust: In a bowl, stir together graham cracker crumbs and melted butter. Press into the bottom of the pan and bake for 10 minutes. Let cool.

  • Beat cream cheese and sugar until smooth.

  • Add eggs one at a time, mixing well after each.

  • Mix in vanilla extract and sour cream until fully combined.

  • Fold in half the caramel sauce and half the crushed Butterfingers.

  • Pour filling over crust, smoothing the top.

  • Bake 30–35 minutes, or until the center is just set and slightly jiggly.

  • Cool for 1 hour, then refrigerate for 4 hours or overnight.

  • Before serving, drizzle remaining caramel and sprinkle with crushed Butterfingers. Slice into bars and enjoy!
