Ingredients
- 1 pound sweet Italian sausage
- 1 medium butternut squash, cubed
- 2 tablespoon olive oil
- 1 medium sweet onion, chopped
- 3 cloves garlic, minced
- 2 tablespoon tomato paste
- 1 can (14.5 ounce) fire-roasted tomatoes
- 4 cup chicken stock
- 1/2 cup heavy cream
- 2 cup chopped kale or spinach
- 12 ounce cheese tortellini
- Salt and pepper to taste
Instructions
1. Heat a large pot over medium heat and add the sweet Italian sausage. Break it apart as it cooks until browned.
2. Add the onions, garlic, and cubed butternut squash. Season with salt and pepper, and cook until softened.
3. Stir in the tomato paste and cook for a few minutes.
4. Add the fire-roasted tomatoes and Parmesan rind, then pour in the chicken stock. Bring to a boil, then simmer for 15-20 minutes until the squash is tender.
5. Stir in the heavy cream, followed by the chopped kale (or spinach) and cheese tortellini. Cook for about 5 more minutes until the tortellini are tender.
6. Serve with grated Parmesan cheese and crushed red pepper flakes if desired.
