A delicious breakfast twist on a classic dish combining fluffy scrambled eggs, melty cheddar cheese, and crispy tortilla.
Ingredients
- 2 large flour tortillas
- 4 large eggs
- 1 tablespoon milk (optional)
- 1 tablespoon butter
- 1 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. In a mixing bowl, whisk the eggs with a splash of milk (if using), salt, and pepper until well combined. Melt the butter in a nonstick skillet over medium heat, then pour in the egg mixture. Cook, stirring occasionally, until the eggs are just set. Transfer the scrambled eggs to a plate.
2. Wipe the skillet clean if needed. Place one tortilla in the skillet over medium heat. Sprinkle half of the shredded cheddar cheese over the tortilla, then top with the scrambled eggs and the remaining cheddar cheese. Place the second tortilla on top.
3. Cook the quesadilla for 2-3 minutes until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 1-2 minutes, or until the second side is golden and the cheese is melted and gooey.
4. Slide the perfectly toasted Cheddar Egg Quesadilla onto a cutting board and let it rest for a minute. Slice it into wedges and serve with your favorite toppings, such as salsa, sour cream, or hot sauce.
Notes
For a vegetarian option, incorporate sautéed vegetables such as spinach or bell peppers. For a protein boost, add cooked bacon or sausage. Use corn tortillas for a gluten-free version.
