- 1 cup heavy cream
- 2 tablespoons cream cheese
- 1 tablespoon cornstarch (optional, for thickening)
- 1/4 cup cold water (if using cornstarch)
- Fresh parsley, for garnish
Instructions
- Cook the Beef & Bacon: In a large pot or Dutch oven over medium heat, cook the bacon until crispy. Remove and set aside. In the same pot, add the ground beef and cook until browned. Drain excess grease if necessary.
- Sauté the Veggies: Add the diced onion and garlic to the pot with the cooked beef. Sauté for 2-3 minutes until softened.
- Simmer the Soup: Pour in the beef broth and add the diced potatoes, drained tomatoes, Worcestershire sauce, mustard, smoked paprika, salt, and black pepper. Stir well and bring to a simmer. Cover and cook for 15-20 minutes until the potatoes are tender.
