Cheesy Garlic Zucchini Steaks: A Mouthwatering Vegetarian Delight
Ingredients
- 2 medium zucchini
- 1 teaspoon kosher salt
- 3 cloves garlic
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoon olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil
Instructions
1. Slice the zucchini lengthwise into thick “steaks.” Sprinkle with kosher salt and let sit for 10 minutes. Pat dry with paper towels.
2. In a small pan, heat 2 tablespoon of olive oil over medium heat. Add minced garlic and crushed red pepper flakes, sauté for about 1 minute until fragrant.
3. Heat remaining olive oil in a large skillet over medium-high heat. Sear zucchini steaks cut-side down for 3-4 minutes per side until golden-brown.
4. Reduce heat to low, spoon garlic-infused oil over zucchini, and sprinkle mozzarella and Parmesan evenly on top. Cover and let cheese melt for 2-3 minutes.
5. Garnish with fresh basil leaves and serve warm.
Notes
Serve as a vegetarian main course or a side dish. Pairs well with fresh salad or roasted vegetables.
