Ingredients
- 2 cup diced potatoes
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/4 cup milk
- 1/2 cup cooked ham or bacon (optional)
- 1/4 cup chopped green onions or chives
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Boil the diced potatoes in salted water for 10 to 15 minutes until fork-tender. Drain and set aside.
2. In a large skillet, melt butter over medium heat. Add boiled potatoes and cook for 5 to 7 minutes until golden and crispy.
3. Stir in chopped cooked ham or bacon if using, and heat through for 2 to 3 minutes.
4. In a medium bowl, whisk together eggs, milk, salt, and pepper until smooth.
5. Pour the egg mixture over the potatoes in the skillet. Cook for about 5 minutes, stirring occasionally, until fully scrambled.
6. Sprinkle cheddar cheese over the scrambled eggs, cover, and let melt for 2 to 3 minutes.
7. Garnish with chopped green onions or chives and serve warm.
