  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon all-purpose flour
  • 1 cup 2% milk
  • 1/2 cup heavy cream
  • 1 can (10.5 ounce) cheddar cheese soup
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon salt
  • 1 1/2 cup shredded sharp cheddar cheese

Instructions

1. Preparing the Potatoes: Begin by peeling and cubing the russet potatoes. In a large pot, bring salted water to a boil and add the potatoes. Cook for about 7 minutes, or until the potatoes are fork-tender. Drain the potatoes and set them aside.

2. Browning the Kielbasa: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced kielbasa and cook, stirring occasionally, until the sausage is browned and crispy, about 5 minutes. Remove the kielbasa from the heat and set it aside.

3. Making the Cheese Sauce: In a saucepan, melt 2 tablespoon of unsalted butter over medium heat. Whisk in 2 tablespoon of all-purpose flour and cook for 2 minutes, stirring constantly, until the mixture is pale yellow. Gradually add 1 cup of 2% milk and 1/2 cup of heavy cream, whisking continuously until the sauce is smooth. Stir in the cheddar cheese soup, garlic powder, cumin, black pepper, and salt. Cook for 3-4 minutes, stirring occasionally, until the sauce has thickened. Remove the pan from the heat and stir in 1 1/2 cup of shredded sharp cheddar cheese until it’s melted and the sauce is smooth.

4. Assembling the Dish: Preheat your oven to 350°F. In a greased 9×13-inch baking dish, layer the boiled potatoes and the browned kielbasa. Pour the cheese sauce evenly over the top of the dish.
