Ingredients

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 3 cup sweet potatoes, cubed (about 2 medium potatoes)
  • 2 tablespoon taco seasoning
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, seeded and diced
  • 1 cup shredded cheese

Instructions

1. In a large nonstick skillet, brown the ground beef and diced onions over medium heat, about 10 minutes. Drain any excess fat from the pan.

2. Stir in the minced garlic, cubed sweet potatoes, taco seasoning, water, frozen corn, and diced poblano pepper. Cover the skillet and let it all simmer for 12-15 minutes, stirring occasionally, until the sweet potatoes are fork-tender.

3. Remove the lid and continue cooking for 3-5 minutes over medium-low heat to evaporate any remaining liquid in the skillet.

4. Sprinkle the shredded cheese over the top of the skillet, then cover briefly to allow the cheese to melt and get nice and gooey.

5. Garnish your Cheesy Tex-Mex Ground Beef & Sweet Potato Skillet with fresh cilantro, cool avocado slices, and a dollop of tangy sour cream, if desired. Serve it as is or pair it with rice, tortilla chips, or in taco shells for a complete meal.
