Ingredients
- 1 cup cooked chicken, shredded
- 2 cup day-old rice
- 4 ounce bacon, diced
- 1/2 cup frozen mixed vegetables
- 2 large eggs, beaten
- 1/4 cup onion, chopped
- 2 cloves garlic, minced
- 2 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
Instructions
1. In a large skillet, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
2. Add the chopped onion and minced garlic to the skillet and sauté until softened.
3. Push the onion and garlic to the side and pour in the beaten eggs, scrambling them until fully cooked.
4. Stir in the shredded chicken, day-old rice, and frozen mixed vegetables. Cook over high heat, stirring frequently.
5. Add the soy sauce, sesame oil, and black pepper. Mix well and cook until heated through and slightly crispy.
Notes
For a vegetarian option, substitute chicken with tofu.
