  • 2 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon butter
  • 1 medium onion, chopped
  • 4 cup fresh broccoli florets
  • 1 cup orzo pasta
  • 4 cup chicken stock
  • 1 cup grated parmesan cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoon fresh lemon juice
  • 1/4 cup chopped fresh herbs (basil, oregano, or parsley)

Instructions

1. Heat the cooking oil in a large skillet over medium-high heat. Add the chicken pieces and cook for about 3 minutes per side, or until the chicken is no longer pink in the center. Season with salt and pepper, then remove from the skillet and set aside.

2. In the same skillet, melt the butter and add the chopped onion and broccoli florets. Sauté for 5-7 minutes, or until softened. Add minced garlic and cook for an additional minute.

3. Add the orzo to the skillet, tossing to coat in the buttery vegetable mixture. Pour in the chicken stock and bring to a simmer. Cook for 10-11 minutes, or until tender and has absorbed the broth.

4. Stir in the parmesan and cheddar cheeses until melted. Add the cooked chicken back to the skillet and gently toss to combine.

5. Squeeze fresh lemon juice over the dish and stir to incorporate. Adjust seasoning with more salt and pepper if needed. Garnish with fresh herbs before serving.

Notes

Leftover Chicken and Broccoli Orzo can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or on the stovetop, adding a splash of chicken broth or water if needed.
