Ingredients
- 1 pound boneless skinless chicken thighs or breasts
- 2 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced (optional)
- 1 cup long-grain white rice
- 2 cup chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas (optional)
- Fresh parsley or green onions for garnish
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
3. Remove the chicken and set aside. Sauté the onion, garlic, and red bell pepper until softened, about 3-4 minutes.
4. Stir in the rinsed rice, coating it with the oil and spices.
5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
6. Stir in the reserved chicken and frozen peas, cover, and cook for an additional 2-3 minutes until peas are heated through.
7. Garnish with fresh parsley or green onions and serve hot.

Customize with additional vegetables like zucchini or mushrooms.
For a low-carb version, substitute cauliflower rice for the white rice.
