Ingredients

  • 2 large chicken breasts (about 300g/10oz each)
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 eschalots (or ½ a small onion)
  • 1 garlic clove
  • 2 cups sliced white mushrooms
  • 1 cup dry Marsala wine
  • ½ cup low-sodium chicken broth
  • ½ cup heavy cream
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

1. Slice each chicken breast in half horizontally to create 4 thinner cutlets.

2. Pound the chicken to an even thickness of about 1 cm (0.4 inches).

3. Season the chicken with salt and pepper, then coat in flour.

4. Heat 1 tablespoon of oil and 1 tablespoon of butter in a skillet over medium-high heat.

5. Cook the chicken for 3-4 minutes on one side until golden, then flip and cook for 2 minutes on the other side.

6. Remove chicken from the pan and set aside.

7. In the same pan, add the remaining oil and butter.

8. Sauté the eschalots and garlic for 1 minute until fragrant.

9. Add sliced mushrooms and cook for 3-4 minutes.

10. Pour in the Marsala wine and simmer on high heat for 3 minutes until reduced by half.

11. Reduce heat to low, stir in chicken broth, heavy cream, salt, and pepper.

12. Simmer for 3-5 minutes until the sauce thickens.

13. Return chicken to the pan and simmer for 1 minute to reheat.

14. Serve hot over mashed potatoes, pasta, or polenta.
