  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 cup broccoli florets
  • 1 sliced red bell pepper
  • 1 cup snap peas
  • 1 medium carrot, thinly sliced
  • 2 tablespoon minced garlic
  • 1 tablespoon freshly grated ginger
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoon brown sugar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoon water
  • 1 tablespoon Sriracha
  • 2 tablespoon oil for cooking
  • 2 sliced green onions for garnish

Instructions

1. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, cornstarch, water, and Sriracha until well combined. Set aside.

2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken, season with salt and pepper, and cook for 5-6 minutes until golden brown and cooked through. Remove the chicken from the pan and set aside.

3. Add the remaining 1 tablespoon of oil to the same pan. Toss in the broccoli, bell pepper, snap peas, and carrot. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

4. Stir in the minced garlic and grated ginger, and cook for 1 minute until fragrant.

5. Return the cooked chicken to the pan. Pour in the prepared sauce and toss everything together. Cook for 1-2 minutes, until the sauce thickens and coats the chicken and veggies.

6. Garnish with sliced green onions and serve hot over steamed rice or noodles.
