Ingredients

  • 3 cloves fresh garlic, minced
  • 9 ounce cheese-filled tortellini
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cup fresh spinach
  • 2 teaspoon Italian seasoning
  • 2 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

1. Chop the chicken into bite-sized pieces and mince the garlic.

2. In a large skillet, heat the olive oil over medium heat. Sauté the chicken until golden brown, about 5-7 minutes. Add the minced garlic and cook until fragrant, about 1 minute.

3. Meanwhile, in a separate pot, bring salted water to a boil and cook the tortellini according to the package instructions. Drain the tortellini, reserving some of the pasta water for later.

4. Reduce the heat in the skillet and stir in the heavy cream and Italian seasoning. Let the sauce simmer until slightly thickened, about 3-4 minutes. Add the drained tortellini, fresh spinach, and Parmesan cheese to the skillet. Toss everything together until the spinach is wilted and the sauce coats the tortellini beautifully. Adjust the consistency of the sauce with reserved pasta water as needed.

5. Serve immediately.

Notes

For a gluten-free option, use gluten-free tortellini or substitute with gluten-free penne or fusilli.

For a vegetarian version, omit the chicken and use sautéed mushrooms or roasted bell peppers.
