  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 8 ounce mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 8 ounce noodles
  • 2 tablespoon butter
  • Salt and pepper to taste

Instructions

1. Season the chicken by seasoning both sides with salt and pepper.

2. Sear the chicken in a large skillet with olive oil over medium heat for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.

3. In the same skillet, melt the butter and sauté the sliced mushrooms until browned, about 5 minutes.

4. Stir in the minced garlic, dried thyme, and dried oregano. Pour in the chicken broth and heavy cream, simmer for 5-7 minutes until thickened.

5. Return the cooked chicken to the skillet and simmer for 2-3 more minutes to warm through.

6. Cook the noodles according to package instructions, drain, and toss with 2 tablespoon of butter.

7. Serve by placing buttered noodles on a plate, topping with chicken and creamy mushroom sauce, and garnishing with parsley and Parmesan cheese.
