Ingredients
- 2 boneless, skinless chicken breasts
- 2 zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 oz pasta (such as penne or fusilli)
- Parmesan cheese for garnish (optional)
Instructions
1. Start by boiling the pasta according to the package directions. Once cooked, drain the pasta and set it aside.
2. Cut the chicken breasts into bite-sized pieces and season them with salt, pepper, and half of the Italian seasoning.
3. Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken pieces and cook until they’re golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.
4. In the same skillet, add the sliced zucchini and halved cherry tomatoes. Cook for 3-4 minutes, until the veggies are tender. Then, add the minced garlic and cook for an additional 30 seconds, just until fragrant.
5. Return the cooked chicken to the skillet, along with the drained pasta. Sprinkle the remaining Italian seasoning over the top and toss everything together to combine and heat through.
