  • 2 cup cooked diced beets
  • 1 can (15 ounce) chickpeas
  • 1 cup chopped carrots
  • 1 cup crumbled feta cheese
  • 1/2 cup finely chopped red onion
  • 1/4 cup fresh parsley

Instructions

1. In a large bowl, whisk together the extra-virgin olive oil, lemon juice, grated or minced garlic, dried oregano, salt, and black pepper until the vinaigrette is well combined.

2. To the bowl with the vinaigrette, add the diced cooked beets, rinsed and drained chickpeas, chopped carrot, crumbled feta cheese, finely chopped red onion, and fresh chopped parsley. Gently toss everything together until the salad is evenly coated in the lemon-garlic vinaigrette.

3. Once the salad is assembled, you can serve it immediately or chill it in the refrigerator for a bit before serving.
