  • 2 pound russet or Yukon gold potatoes, peeled and diced into 1/2-inch cubes
  • 2 tablespoon olive oil

  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 ounce chili seasoning
  • 15 ounce chili beans or kidney beans, drained
  • 14.5 ounce diced tomatoes with green chiles
  • 1/2 cup beef broth or water
  • 1 1/2 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or pepper jack cheese

Instructions

1. Preheat your oven to 400°F. Toss the diced potatoes with olive oil, salt, pepper, smoked paprika, and garlic powder. Spread the seasoned potatoes in a greased 9×13 inch baking dish and roast for 20 minutes, until they’re tender and lightly golden.

2. While the potatoes are roasting, heat a large skillet over medium-high heat. Add the ground beef and onion, and cook until the beef is browned, about 7 to 8 minutes. Stir in the minced garlic and cook for 1 minute more.

3. Drain any excess fat from the skillet. Stir in the chili seasoning, beans, diced tomatoes with chiles, and beef broth. Simmer the chili mixture for 5 to 7 minutes, until it’s slightly thickened. Season with salt and pepper to taste.

4. Remove the roasted potatoes from the oven and reduce the temperature to 375°F. Pour the chili mixture evenly over the potatoes, then top with the shredded cheddar and Monterey Jack cheeses. Return the dish to the oven and bake uncovered for 15 to 20 minutes, until the cheese is melted and bubbly. For a golden finish, you can broil the dish for 1 to 2 minutes at the end.

5. Let the Chili Cheese Potato Bake cool for 5 minutes, then serve it up hot. Garnish with a dollop of sour cream, sliced green onions, and jalapeño slices, if desired.

Notes

For an extra boost of flavor, you can add a teaspoon of cumin, a pinch of chili powder, or a splash of hot sauce to the chili mixture. This will amp up the Tex-Mex flair of the dish.
