  • 2 tablespoon water
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/4 teaspoon baking soda (optional, for extra tenderness)
  • 1 tablespoon soy sauce
  • 1 1/2 tablespoon oyster sauce
  • 1/2 tablespoon hoisin sauce
  • 1 teaspoon dark soy sauce (or regular soy sauce)
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 tablespoon Shaoxing wine
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 large white onion, sliced
  • 4 green onions, cut into 2-inch pieces (white and green parts separated)
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoon vegetable oil for cooking

Instructions

1. Begin by slicing the beef thinly against the grain. In a bowl, combine the soy sauce, Shaoxing wine, water, sesame oil, cornstarch, and baking soda (if using). Add the beef and mix well to ensure the marinade coats the meat evenly. Allow the beef to marinate for 15 minutes.

2. In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, dark soy sauce, sugar, sesame oil, Shaoxing wine, cornstarch, and water. Set this flavorful sauce aside.

3. Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the marinated beef in a single layer and sear for 2-3 minutes, until it’s browned but not fully cooked. Remove the beef from the wok and set it aside.

4. Add the remaining 1 tablespoon of oil to the wok. Toss in the ginger, garlic, and the white parts of the green onions. Stir-fry for 30 seconds.

5. Add the sliced white onion to the wok and stir-fry for 3-5 minutes, until the onions are softened and slightly caramelized.

6. Return the seared beef to the wok. Give the stir fry sauce a quick stir to recombine the cornstarch, then pour it into the wok. Toss everything together until the sauce thickens and coats the beef and onions in a glossy glaze, about 1-2 minutes. Finally, add the green parts of the green onions and give it one final toss to incorporate them.

7. Transfer the delicious Chinese Beef and Onion Stir Fry to a serving plate and enjoy it immediately.

Notes
