Ingredients
- 1 package (about 40) saltine crackers
- 1 cup unsalted butter
- 1 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
Instructions
1. Preheat your oven to 350°F and line a rimmed baking sheet with parchment paper or foil.
2. Arrange the saltine crackers in a single layer on the prepared baking sheet.
3. In a saucepan over medium heat, melt the unsalted butter and brown sugar, stirring constantly. Once the mixture begins to boil, allow it to bubble for 3 minutes.
4. Remove the toffee mixture from the heat and stir in the vanilla extract.
5. Pour the hot toffee over the crackers, using a spatula to spread it evenly.
6. Bake the toffee-coated crackers for 5-6 minutes, until the toffee is bubbling.
7. While the toffee is still hot, sprinkle the cinnamon-sugar mixture evenly over the top.
8. Allow the toffee to cool slightly, then refrigerate for 1-2 hours until firm.
