Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 overripe bananas, mashed
- 1 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
3. Mix in the beaten eggs, followed by the mashed bananas, until well combined. Stir in the vanilla extract.
4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
5. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
6. If desired, gently fold in chocolate chips or chopped nuts.
7. Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack. Slice and enjoy.
