4 large bell peppers (any color)

1 cup cooked rice (white or brown)

1 pound ground beef (or ground turkey)

1 can (15 ounces) diced tomatoes, drained

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup shredded cheddar cheese

1 tablespoon olive oil

Instructions

Preheat your oven to 375°F (190°C).

Prep the peppers: Slice the tops off the bell peppers and remove seeds and membranes. Drizzle with olive oil and place upright in a baking dish.

Cook the filling: Sauté onion and garlic in a skillet until soft. Add ground beef and cook until browned. Stir in tomatoes, rice, Italian seasoning, salt, and pepper.

Stuff the peppers: Fill each pepper with the beef mixture. Cover with foil.

Bake for 30 minutes.

Add cheese: Remove foil, sprinkle cheese on top of each pepper, and bake for another 10 minutes until cheese is melted.
