Description

These Classic Stuffed Peppers are packed with savory ground beef, fluffy rice, and vibrant spices, all tucked into perfectly roasted bell peppers and topped with melty cheddar cheese. A hearty, oven-baked comfort food dish that’s easy to prep and even easier to love!


Ingredients

  • 4 large bell peppers (any color)

  • 1 cup cooked rice (white or brown)

  • 1 pound ground beef (or ground turkey)

  • 1 can (15 ounces) diced tomatoes, drained

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 cup shredded cheddar cheese

  • 1 tablespoon olive oil

  • Fresh parsley for garnish (optional)


Instructions

  • Preheat your oven to 375°F (190°C).

  • Prep the peppers: Slice the tops off the bell peppers and remove seeds and membranes. Drizzle with olive oil and place upright in a baking dish.

  • Cook the filling: Sauté onion and garlic in a skillet until soft. Add ground beef and cook until browned. Stir in tomatoes, rice, Italian seasoning, salt, and pepper.

  • Stuff the peppers: Fill each pepper with the beef mixture. Cover with foil.

  • Bake for 30 minutes.

  • Add cheese: Remove foil, sprinkle cheese on top of each pepper, and bake for another 10 minutes until cheese is melted.

  • Garnish with parsley if desired, and serve warm.

Notes

  • Use ground turkey for a lighter version.

  • For extra flavor, add Worcestershire sauce or chopped mushrooms to the filling.

  • Leftovers store well and reheat beautifully in the oven or microwave.

  • Swap rice for cauliflower rice for a low-carb option.
