Ingredients
- 8 ounce rotini pasta
- 2 cup cooked, diced chicken breast
- 6 slices crispy bacon, crumbled
- 1 cup cherry tomatoes, halved
- 2 cup chopped lettuce
- 1 cup cubed cheddar cheese
- 1/2 cup diced red onion
- 1 cup diced cucumber
- 1/2 cup mayonnaise
- 1 tablespoon ranch seasoning
Instructions
1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Cook the pasta according to the package directions until it’s al dente. Drain the pasta and rinse it with cold water to cool it completely.
2. Prepare the Ingredients: While the pasta is cooling, dice the cooked chicken, crumble the bacon, halve the cherry tomatoes, chop the lettuce, cube the cheese, and dice the red onion and cucumber.
3. Make the Dressing: In a small bowl, whisk together the mayonnaise and ranch seasoning until they’re well combined.
4. Combine Everything: In a large bowl, combine the cooled pasta, chicken, bacon, tomatoes, lettuce, cucumber, cheese, and red onion. Pour the dressing over the top and toss everything until it’s evenly coated.
5. Chill and Serve: Cover the salad and refrigerate it for at least 2 hours, or overnight, to allow the flavors to meld together. Before serving, season the salad with salt and pepper to taste.
Notes
To make a healthier version, you can substitute Greek yogurt for some of the mayonnaise in the dressing, use whole-wheat pasta, and increase the amount of leafy greens.
