Ingredients
- 8 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions
1. Preheat your oven to 350°F. Grease a 12-cup muffin tin or line it with silicone liners.
2. In a blender, combine the eggs, cottage cheese, shredded cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
3. Pour the blended egg mixture into a mixing bowl. Gently fold in your choice of optional mix-ins, up to 1 cup total.
4. Evenly distribute the egg mixture among the 12 muffin cup, filling them about three-quarters full.
5. Place the muffin tin in the preheated oven and bake for 22–25 minutes, or until set and lightly golden on top.
6. Allow to cool slightly before removing from the tin. Serve warm or store for later enjoyment.
Notes
Store in an airtight container in the refrigerator for up to 5 days. Wrap each egg bite individually and freeze for up to 3 months.
