Cowboy Caviar is a vibrant and flavorful Tex-Mex-inspired dish combining fresh vegetables, beans, and a zesty dressing, perfect for parties and healthy meals.
Ingredients
- 1 can black beans
- 1 can black-eyed peas
- 1 cup cherry tomatoes, diced
- 1 cup sweet corn
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1 avocado, diced (optional)
- 1/4 cup fresh cilantro, chopped (optional)
- 1 jalapeño, seeded and minced (optional)
Instructions
1. Combine the drained and rinsed black beans, black-eyed peas, cherry tomatoes, corn, bell peppers, and red onion in a large bowl and toss gently.
2. In a separate bowl, whisk together olive oil, fresh lime juice, red wine vinegar, honey or maple syrup, chili powder, cumin, garlic powder, salt, and black pepper.
3. Pour the dressing over the vegetable mixture and toss gently to coat evenly.
4. Cover and refrigerate for at least 30 minutes before serving.
Notes
Cowboy Caviar is best served chilled and can be made ahead of time for better flavor.
Store in an airtight container for up to 3 days.
