Description

Get ready to saddle up your taste buds for the ultimate Cowboy Corn Dip! This irresistible and flavor-packed dip is the perfect appetizer for any gathering, from backyard barbecues to game day celebrations.

Ingredients

Scale
  • 2 cups of canned, frozen (thawed), or fresh (grilled for extra flavor) corn.
  • 8 ounces of softened cream cheese.
  • 1/2 cup of sour cream.
  • 1 1/2 cups of shredded cheddar, pepper jack, or Mexican blend cheese.
  • 12 diced jalapeños, adjusted to your desired spice level.
  • 1 can (10 ounces) of drained Rotel tomatoes.
  • 1/4 cup of chopped fresh cilantro, plus extra for garnish.
  • 1/4 cup of chopped green onions, plus extra for garnish.
  • 1 tablespoon of fresh lime juice.
  • Salt and black pepper to taste.

Instructions

1. In a large mixing bowl, combine the softened cream cheese and sour cream. Use a hand mixer or a sturdy spatula to blend the two ingredients until they are smooth and creamy.

2. Next, stir in the shredded cheese, diced jalapeños, drained Rotel tomatoes, crumbled bacon (if using), chopped cilantro, chopped green onions, and fresh lime juice. Mix everything together until the ingredients are evenly distributed.

3. Gently fold in the corn, taking care not to overmix. This will help maintain the texture and prevent the dip from becoming too dense. Season the mixture with salt and black pepper to taste.

4. Once the Cowboy Corn Dip is well-combined, transfer it to a serving bowl and refrigerate for at least 1 hour. This allows the flavors to meld and the dip to firm up. When ready to serve, garnish the top with extra chopped cilantro and green onions. Serve the dip chilled with tortilla chips, crackers, or even fresh vegetables for dipping.

Notes

Cowboy Corn Dip is the perfect make-ahead appetizer. You can prepare the dip a day in advance and store it covered in the refrigerator. Serve it with crispy tortilla chips, crunchy veggies like carrot sticks, celery, and bell pepper strips.
