Ingredients

  • 1 pound Italian sausage
  • 1 medium diced onion
  • 3 cloves minced garlic
  • 3 cup diced potatoes
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 2 cup chopped kale or spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon olive oil (if needed)
  • 1/4 cup grated Parmesan cheese (for serving)

Instructions

1. Heat a large pot over medium heat and add the Italian sausage. Cook until browned, breaking it up as it cooks.

2. Remove excess grease from the pot. Add the diced onion and sauté until softened, about 5-7 minutes.

3. Stir in the minced garlic and cook for an additional minute.

4. Add the diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer and cook for about 15 minutes, until fork-tender.

5. Stir in the heavy cream and chopped greens. Season with salt, black pepper, and crushed red pepper flakes. Simmer for an additional 5 minutes.

6. Ladle into bowls and top with grated Parmesan cheese. Serve with crusty bread or your favorite accompaniment.
