Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 2 cup old-fashioned rolled oats
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 2 cup diced apples
- 1 cup cranberries
Instructions
1. Preheat your oven to 350°F and grease a 9×9-inch baking dish.
2. Mix the cottage cheese, eggs, maple syrup, vanilla extract, and orange zest until smooth.
3. In a separate bowl, combine the rolled oats, cinnamon, and baking powder.
4. Fold the oat mixture into the base mixture until well incorporated.
5. Gently fold in the diced apples and cranberries.
6. Pour the mixture into the prepared baking dish and bake for 35-40 minutes, or until golden brown and set.
7. Allow to cool slightly before slicing and serving.
Notes
