Description
Cranberry Apple Twice-Baked Sweet Potatoes are a delightful side dish bursting with sweet and tart flavors, perfect for the holiday season.
Ingredients
- 2 medium sweet potatoes
- 1 cup fresh cranberries
- 1 cup chopped apples (such as Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoon unsalted butter
- 1/4 teaspoon salt
Instructions
1. Preheat your oven to 400°F.
2. Wash and pierce each sweet potato several times with a fork, then bake for 45–60 minutes until tender.
3. Once cooled, slice the sweet potatoes in half and scoop out most of the flesh into a bowl.
4. Add chopped apples, cranberries, brown sugar, cinnamon, butter, and salt to the bowl and mash together.
5. Spoon the filling back into the sweet potato skins and pack gently.
6. Bake the filled sweet potatoes at 350°F for an additional 20–25 minutes.
Notes
These make a wonderful side dish for roasted turkey, baked ham, or pork chops.
Can be prepared in advance and stored in the refrigerator for up to 2 days.
