Cranberry Orange Bread: A Delightful Balance of Sweet and Tart
Ingredients
- 2 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon orange zest
- 1/2 cup fresh orange juice
- 1 cup fresh cranberries
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup chopped walnuts (optional)
Instructions
1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan with cooking spray or line it with parchment paper.
2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk until well blended.
3. In a separate bowl, whisk together the orange zest, orange juice, eggs, and vegetable oil until smooth.
4. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
5. Gently fold in the fresh cranberries and chopped walnuts (if using).
6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 30–40 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
Notes
Fresh cranberries provide a more tart and vibrant flavor than dried cranberries.
For best results, spoon the flour into your measuring cup and level it off with a knife.
You can substitute vegetable oil with melted butter or applesauce for a richer flavor or healthier option.
