Ingredients
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 cups cooked shredded chicken
1 cup cooked crumbled bacon
2 cups cheese tortellini
2 cups fresh spinach
Salt and pepper to taste
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant, about 3-5 minutes.
2. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
3. Stir in the cooked shredded chicken and the cheese tortellini. Simmer the soup for 6-8 minutes, or until the tortellini is cooked through.
4. Add the cooked crumbled bacon and the fresh spinach leaves to the pot. Season the soup with salt and pepper to taste.
