Ingredients
- 2 pound boneless, skinless chicken breasts
- 1 pound mushrooms, sliced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tablespoon olive oil
- 2 tablespoon butter
- 1/4 cup all-purpose flour
- 2 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet over medium-high heat, sear the chicken in olive oil until golden brown on both sides. Remove from the pan and set aside.
2. In the same skillet, melt the butter and add the chopped onion. Sauté until soft and translucent, about 5 minutes. Add minced garlic and sliced mushrooms, cooking until tender and lightly golden.
3. Sprinkle flour over the mushroom mixture and stir to coat. Gradually pour in chicken broth while whisking to prevent lumps. Add heavy cream and let simmer until slightly thickened. Adjust seasoning with salt and pepper.
4. Preheat oven to 375°F. Place seared chicken in a baking dish and pour creamy mushroom sauce over top. Sprinkle mozzarella and parmesan cheese evenly.
5. Bake for 20-25 minutes, until chicken is cooked through and cheese is bubbly and golden brown.
